Shakshuka with Feta & Zahtar

Enough for 2 hungry people

INGREDIENTS
- Whole peeled tomatoes, 1 large can
- Yellow pepper, 1
- Spanish onion, 1
- Garlic, 3-4 cloves
- Feta cheese, 1/2 block, chopped
- Mint, parsley, cilantro, small bunches of each, chopped
- Olive oil, 2 tablespoons
- Butter, 2 tablespoons
- Smokey Paprika, 2 teaspoons
- Zahtar, 2 teaspoons
- Salt and pepper to taste
- Eggs, 2-4

INSTRUCTIONS
1 - In a sauté pan, heat the olive oil and butter on medium-high heat. Add the onions, garlic, yellow pepper, salt, pepper, and paprika. Sauté until soft.
2 - Crush the tomatoes by hand in a large bowl and add to the pan. Turn the heat down to a simmer, cover for about 20 minutes stirring occasionally.
3 - Taste for seasoning. Add your eggs (1-2 per person) and cover until eggs are cooked to your preference. Still runny is best in my option.
4 - Add the feta, Zahtar, and chopped herbs and serve with toast.
